Chef's Recommendation and an iconic meal from Kelantan. The rice is tinted a light blue from petals of flowers called bunga telang. For a family size serving of rice, hundreds of these petals have to be sun-dried and boiled in water. This naturally tinted 'blue rice' is served with Ulam. Ulam is a combination of fresh aromatic herbs; local mint, basil, lemongrass and raw vegetables; bean sprouts, cucumber, combined and served with a special savoury sauce.
